I’ve had my fair share of break-ups, not in quantity but in quality and what the writer speaks about in this article just makes so much sense to me. It also brings back a ton of memories that make me  want to both laugh and cry. Guess I’m feeling sentimental today. Weekend is upon us dolls! I don’t think there’s anyone who’s more relieved than me at this point in time! I’m proud to say that I’ve survived a rather intense work week and managed to get most of my work out the way and for that, I shall indeed celebrate with a cocktail or 3 tonight 😉

Recipe: Chicken Pesto Pasta bake

Good morning! It’s nearly weekend so hang in there dolls, for some (read: me) it’s been one helluva week and I’m thrilled to see that not-too-distant light at the end of the tunnel.

For today’s post, I thought I’d cater to all the aspiring foodies out there by giving you the recipe to my delicious chicken pasta. I believe that every girl needs to have at least three recipes that shes perfected. Trust me, as old as this advice may be, the way to a man’s heart is indeed through his stomach 😉

The great thing about this recipe is that you can tweak and add to it as you like, when I make this pasta it never comes out the same way twice which great as I quite like the varying tastes of the dish. Try it out and let me know what you think!

Chicken and Pesto Pasta bake

Ingredients:

• 1 Onion, chopped
• Garlic (cloves or paste)
• Green, red or yellow peppers
• 1 pack chicken fillets
• Desired spices (barbeque, Cajun, paprika, peri-peri, salt, ground pepper, etc)
• 1 pack of 250g pasta (fettucine, tagliatelle or linguine)
• Soy sauce (to brown the chicken)
• 250ml fresh cream
• Coriander pesto/ Red pesto
• Few leaves of Coriander
• Grated cheddar or mozzarella cheese

Method:

• Braise the chopped onion in virgin olive oil in a non-stick frying pan.
• Add a teaspoon of garlic to the onion.
• Cut the defrosted chicken fillets into strips. Add this to the pan.
• Once the chicken and onion is cooking, sprinkle some soy sauce onto the chicken.
• Spice the chicken strips as desired and allow to cook until done.
• Cook the pasta in a pot of boiling water, adding oil and salt to the pot.
• Usual cooking time for the pasta is about 10 minutes.
• Once the pasta is soft, strain it with a colander.
• In a big oven dish, combine the pasta and chicken while adding the fresh cream (for an    interesting taste, add a 1/4 of the basil pesto to the fresh cream before adding it to the pasta) to the mix.
• Finally sprinkle the top with the grated cheese so that it covers the top of the pasta and  cook in the oven for 15 minutes.
• Add finely chopped Coriander on top before removing from the oven and serve.

Optional extras to compliment the pasta include a green leafy salad or curry loaf bread.

Cat lady 4 life

Pretty much along with the rest of the internet, I have a slightly abnormal obsession with with cats. I am particularly smitten with my beautiful tabby feline friend who I adopted more than a year ago at the tender age of 10 weeks old. Taking care of this creature has enriched my life in a way that only fellow cat lovers will understand.

I know that “dog people” will argue that dogs are more “superior” to cats, but let’s be real here for a moment, if cats can own the internet with their cute memes and viral videos, what exactly do their canine counter parts have to offer? I rest my case.

A few months ago, my kitty became a mommy to 4 beautiful, bouncy kittens. I’ve included some photo’s below, enjoy!

I have a decent job. I have a good circle of friends. I’m reasonably intelligent and nothing about my visage causes children to scream in terror. By all accounts, my life’s not bad. But none of these things matter to me if I haven’t written recently — or worse yet, if I have an article that I’m procrastinating on writing. A tremendous amount of my sense of self-worth has become wrapped up in my capacity to “create.” 

If more than a week goes by without my editor giving me an event to cover, I get unbelievably antsy (just ask any of my friends who have to listen to me complain about being “bored” after a week off). My neurosis is even more intense if I’m working on something that doesn’t have a deadline. Do I want to go…

Caffeine addicts unite!

Hi I’m Sky (haha, rhymes) and I’m addicted to all things caffeinated…

I’m not exactly sure when my illicit love affair with coffee began, but it’s certainly lasted longer than any of my (romantic) relationships. Coffee has been there for me in times of sorrow, times of exhaustion and it has been a warm companion through the cold Winter nights. Sounds like true love right? Well it is, a rich, dark roasted, steamy kinda love ;-).

I’m aware that my so called addiction to this beautiful beverage is not good for me in the long run, but you know what they say about things that are so good it’s bad, or is it things that are so bad they’re good?? Who cares, I love coffee, coffee loves me. We’re destined to be. (I’m on a roll with the rhyming today, can you tell?)

One of the best moments of my very first international travelling experience was getting to taste the wonderful coffee at Starbucks, it’s every coffee lovers dream to live within walking distance of this store, and when I was in both Texas and New York, I made sure I got my daily fix first thing in the morning. I even went to Java Jacks in Nacogdoches, Texas, it’s the cutest little coffee shop filled with all sorts of interesting books and furniture and of course, they make divine coffee!

What I love about coffee, (besides that enticing smell) is the craft with which it’s made, as well as the many varieties that it comes in. Espresso, Latte’s, Cappucino’s, Americano’s, Choco Chino’s, Cafe Mocha…I could go on and on.

Right now it’s Summer in our country which means warmer days and cooler drinks. Of course this hasnt stopped me from indulging in my drug of choice, as there is the wonderful concoction called Iced Coffee (the person who created this needs a medal or something!). Its literally the best thing ever to drink on a blistering hot day, you get a chilled drink made with ice cream (yum!) while getting the caffeinne fix all in one drink, gotta love it!

Stupid Cupid vs. Sincere St. Valentine

Hey folks, it’s that time of year again. Love is in the air and we’re being bombarded with a flurry of red and white themed advertising messages. These corny, sometimes over the top messages attempt to persuade us to shower our Valentine with unreasonably priced gifts, all in the name of Love …and commercialism (but that’s the part they leave out, naturally). After all, what better way to show that special someone that you really care for them than by giving them a stuffed teddy bear with the words, “I love you” stitched on to it’s stomach?? Take me now Jean Pierre, take me now. NOT.

Now before you go dismissing me as yet another Valentine’s Day cynic, hear me out. I’m all for expressions of undying love and having a day dedicated to the concept of taking out time out to show and tell someone how much they mean to you. I am not however, supportive of the crazy, commercialised, money making business that this day has become. I’ve always felt so sorry for my male friends when it comes to this time of year. There’s so much pressure and expectation from what we see in the movies, commercials or even from past experiences that more often than not it becomes somewhat of a comeptition to see who got the most extravagant gift. (Kinda like Christmas, right?)

It’s that one day in the year where (some) females literally lose their shit over something that, in the bigger scheme of things, hardly has any long lasting value (even if you get that stunning rose bouquet from Woolworths, it will die after a week). The expectations that some women have for this day is crazy. Ranging from insanely expensive dinners at some over priced restaurant (which will be choc a block full because half the city had the same idea as you) to even expecting to be proposed to! For the gentlemen out there, I do so pity you on these occasions.

Rest assured there are ways and means to get through Valentine’s Day without ending up in the dog box or worse, ending up single.

For those in relationships, why not make plans together? Draw up a list of exciting and romantic activities that you will both enjoy, make it something fun, memorable and something that won’t break the bank. There’s far more value in doing something that you’ve both decided on together  than leaving it up to the man, only for the woman to end up disappointed and frustrated. Another option..Ladies, why don’t you surprise your man for a change? Who said Valentine’s Day is only about the females? Y’all want equality right? 😉

Personally, I’ve decided to cook a special 3 course, candle lit dinner for my boo at home, I’ve made a special Valentine’s Day playlist (woohoo for the concept of mixed tapes, haha) and I intend on spoiling him by making all his favourite dishes.

For me, Valentine’s Day is about love. Real, genuine, sincere love. And not just the romantic kind. Love comes in all shapes, types and sizes. Showing you love someone is about more than gifts and the money you spend on them. It’s about acts of kindness, and remembering that at the end of the day, we’re all just humans wanting to love and be loved.

I hope whatever you do, however and whoever you celebrate this day with, that it’s filled with only the happy, positive emotions that love brings.

The beginning of a blog

So…I’ve started a blog…

Before anyone assumes anything, I’m not a writer. Not by skill, certainly not by profession. I love to write but have in recent months neglected this due to life being …well…life. It gets crazy busy and before you know it, you’re waking up on Saturday morning thinking it’s Tuesday while getting dressed for work. (True story; this has in fact happened to me, more than once).

Anyway all excuses aside, this blog is purely an experimental thing for me. There are no specific themes,  I intend to write about whatever inspires me at a particular point in time; life, love and everything in between. I’ve written under a pseudonym as most of the topics and content I’ll be writing about involve real people and real situations and I’m not ready to be disowned by family, friends, lovers, etc. 😉

I felt the need to start this blog as a means of expression of my feelings and thoughts. It’s a scary thought for someone like me to share their raw, honest opinions and feelings with strangers, no less on an online platform. But I’ve recently been inspired by a fellow blogger to use this platform to put myself out there, and I’m keen to take it on.

I hope you enjoy reading what I have to share, and  if you’ve ever thought of doing something similar, I’d say, “What are you waiting for??”
